Ethyl Acetate (E.A.) is a naturally occurring solvent found in bananas and as a by-product of fermented sugars. The coffee is steamed at low pressure for 30 minutes, then placed in a solution of water and E.A. The tank is drained and refilled over 8 hours until all caffeine is removed. Finally, the beans are steamed again and dried/polished for export.
